Lunchbox Dad or Beau Coffron as he is better known is a father on a mission. His mission : to make kids lunches more fun. As it is often really difficult to get kids to eat their fruit and veg, Beau devised a cunning plan to make the meals look more exciting but still containing all the right ingredients to be nutritious for his kids.

1. Despicable Me 2 Minion Lunch
He told the Huffington Post that he thinks it is a really good way to show his daughter how much he loves her and misses her while she is at school. Every Sunday night he sets about cutting and creating the perfect lunch to reflect his daughters current interests. Examples of his creations also include The Lion, The Witch and The Wardrobe, Frozen and Spiderman.
